Erin Adele Cox

Erin Adele Cox, of Moscow, died Saturday, August 2, 2025 at St. Joseph Regional Medical Center in Lewiston. She was 64.

Born October 13, 1960 to Richard “Dick” Rene Miller, Sr. and Mildred “Mickey” Rae Jones in Carmel, California, Erin Adele Miller grew up on the Monterey Peninsula with her three older brothers Rick, Scott, and Dan. Graduating from Pacific Grove High School, Erin enrolled at Monterey Peninsula College in Monterey, California and completed some college while working at various civic offices, including Pacific Grove School district (with her mother), City of Monterey Parking division, and California American (Cal-Am) Water Company.

Soon however, she met a wonderful soldier taking Russian classes at the Defense Language Institute, located at the Presidio of Monterey, who she kept a long-distance correspondence with for several years while he was deployed in Europe. After his service was concluded, she married that solider, Rusty Cox, in the Oakland, California LDS temple for time and all eternity on December 12th, 1987, and started married life in her late grandmother’s home.

After a while, Rusty’s work took them from the California Central Coast to North Idaho, specifically Moscow. There they raised two sons, Ethan and Garrett, while sharing a life of love, service, and compassion. Erin started her own childcare service out of their home and was a second mother to numerous children while their parents worked. Eventually, Erin had to re-enter the workforce and landed a job with the Edward R. Murrow College of Communications at Washington State University. While there, she completed her associate degree in business administration through the BYU Pathway program to improve her skills and increase her knowledge, allowing her to become the Office Manager for the college.

Her life of service was exemplified in her participation as a Service Missionary for the Church of Jesus Christ of Latter-day Saints, where she helped with the Addiction Recovery Program and BYU Pathway program.

When she wasn’t working or serving others, Erin managed to find time helping with her sons’ various extracurricular activities that included Boy Scouts of America, Moscow High School band, and various sporting events. She also was an avid reader of proper romances (in the style of Jane Austen), glamping, British murder shows, and various crafting activities such as quilting and scrap booking. She also loved to bake, canned occasionally, and when time allowed put together jigsaw puzzles with her family. She even managed to keep a book club going for the past 20 years. And her Christmas decorating was always a multi-day affair, much to the chagrin of her boys who had to move her +20 boxes upstairs every Thanksgiving weekend.

She is survived by her husband, Roy “Rusty” Cox, her two sons Ethan (his wife Brianna Leavitt) and Garrett, her three brothers Richard “Rick” Jr., Scott, and Daniel Miller, and their families. She is preceded in death by both her parents and her infant son Riley Morton.
